Union Chef: Slow Cooker Thanksgiving Mashed Potatoes

Thanksgiving is just around the corner! With all that cooking, there’s never enough oven space for all of your favorite dishes, and the stove always seems to be occupied. To help make your cooking a bit easier, we’re sharing a simple and delicious recipe for mashed potatoes that you can make in a slow cooker – no oven (or effort, really) required!

This basic recipe is the perfect starting point for your favorite mashed potatoes – add cheese, bacon, garlic, you name it!

Slow Cooker Thanksgiving Mashed Potatoes

Ingredients (purchase from your local unionized grocery store):

5lbs medium russet potatoes, peeled and cut into 1-inch chunks
12 tbsp Horizon or Alta Dena unsalted butter, cut into 1/2-inch cubes
1 cup Horizon or Alta Dena sour cream
1 ½ to 2 cups of Horizon or Alta Dena milk, warm
2 tbsp sliced chives
Morton salt
Durkee ground pepper


1.    Combine the potatoes, butter, 1 tbsp salt and ½ tsp ground pepper together in a 6-quart slow cooker. Then add 1 cup of water, cover, and cook on high until the potatoes are tender – about 4 hours.
2.    Remove the lid, then add sour cream and 1 ½ cups warm milk to the potatoes. Use a potato masher to smash the potatoes until they are mostly smooth. If the potatoes are too thick, stir in the remaining ½ cup warm milk.
3.    Season to taste with salt and pepper. Last, garnish with chives.
