Summer is in full swing and the heat keeps coming. We’ve put together a recipe for a cool, sweet, and refreshing treat that will keep you comfortable when you think the heat is winning!
Popsicles are the ultimate summer treat and best of all, they’re easy to make at home. You’ll need popsicle molds and popsicle sticks for this recipe. Our strawberry margarita pops call for a boozy twist but, read on for the family-friendly version.
As always, our recipes are designed to be prepared with union-made ingredients and support unionized grocery stores.
Strawberry Margarita Popsicles
• Ingredients – purchase from your local unionized grocery store
o 1 cup freshly squeezed lime juice (6-8 limes)
o ½ cup water
o ½ cup Domino sugar
o ½ cup triple sec*
o ¼ cup Herradura or El Jimador Tequila*
o 1 pint strawberries, quartered
o In a blender, add the lime juice, water, sugar, triple sec, and tequila. Blend until the sugar is dissolved.
o Add the strawberries into the mixture and blend until pureed.
o Pour the margarita into the popsicle molds, insert a popsicle stick into each mold, and freeze until solid – at least 4 hours or overnight.
o Unmold the popsicles and serve!
*For a nonalcoholic version, omit the tequila & triple sec and add another ½ cup of water and ¼ cup lime juice.
